French’s Fried Onion Chicken

Prep Time: 10-15 minutes
Cook Time: 32-35 minutes
Notables: Chicken and eggs, not vegetarian/vegan.
Yields: 6 pieces of chicken
Serves: 3-6 people

 
My favorite thing to make for Tripp and I on dinners where either I’m cooking mainly for him – or I’m not picky about my veggie diet – is baked chicken. It’s easy, it’s quick and it makes for good leftovers. What’s not to love?

There aren’t a lot of before/after shots in this post tonight, but just trust me when I say it’s easy, okay? Pair this sucker with a couple of good side dishes – I did mac & cheese and broccoli – and you won’t regret tonight’s dinner!

Ingredients:

  • 1-1/2 cartons of French’s Fried Onions
  • 1/2 cup egg beaters (or 2 eggs)
  • 1 tbsp mustard
  • 1 tbsp dry, ground mustard
  • A pinch of salt and pepper.
  • 1/8 cup traditional bread crumbs
  • 6 thoroughly thawed chicken cutlets (or cut of choice, may require more ingredients if big pieces)

Recipe:

  • Preheat the oven to 350-degrees (F)/standard.
  • Line a baking sheet with foil.
  • In one container (large enough for coating the pieces of chicken in) mix eggs and mustard.
  • In another container (also large enough for breading pieces of chicken in) pour 1/2 carton of French’s Fried Onions – coating the bottom.
  • Using a potato masher, or other like-kitchen tool, break up the fried onion pieces to your preferred consistency. I like a mixture of ground and crudely texture pieces – you may prefer an evenly crushed mixture.
  • In the same container, add in ground mustard, bread crumbs and the pinches of salt and pepper. Mix thoroughly.
  • Take individual pieces of thawed chicken and begin coating:
    • Dip in egg, coating chicken.
    • Dip in breading mixture.
    • Dip in egg once again.
    • Dip in breading mixture.
      • You may need to work with the chicken some to make sure the amount of breading you want sticks to each piece.
  • Place completely breaded pieces of chicken on baking sheet, evenly spaced.
  • Once oven is heated, bake for 32-35 minutes until chicken is cooked through, breading has definitely a dark golden crust.
    • Watch out for the coloring and make sure your pieces of friend onions do not burn too black.
